Fervently we brew these beers and lay them down to rest, forgotten for a time unknown, in their oubliette of staves.
Process & tasting notes: Oubliette of Staves is a saison aged in wine barrels for 14-18 months, displaying our quintessential saison profile of lime zest, hay and subtle Brettanomyces funk.
The initial blend was two noteworthy barrels, one displaying a pillowy soft saison with delicate notes of vanilla spice and the other a playfully acidic, funky lime saison. These harmonized for ten days after being blended with our largest barrel (a 600 litre Demi Muid from Rosewood Estates Winery), bringing notes of goat-hay, tingly acid, and rounded oak body.
This beer was then transferred over petals of wild-foraged yarrow, bringing a subtle sage-brush herbaceous note to the mélange.
Oubliette of Staves has rested in bottle for months and is now ready to drink. This beer will continue to develop gracefully when stored upright, in a cool (0-16 C) consistent temperature away from light.
Serving suggestions: We prefer to rouse the yeast for a greater expression of our house culture.
