Set still roaming, breathing in the expanse, of lush rolling hills, blanketed in flowers and spice, in fields familiar and foreign, strolling acres of the mind.
Process & tasting notes: Acres of the Mind is our witbier infused with sweet orange, coriander seed, and chamomile flowers, and aged in oak barrels for three years with our house culture. We brewed this beer with a combination of raw white wheat, malted red wheat, and floor-malted pilsner, as well as hops from Alsace, France.
Acres of the Mind has the aroma of a wood cellar filled with drying orange peel. The flavour has a bright citrusy punch, a brush of complex acid, and herbaceous oak, with a dry, cleansing finish reminiscent of Aperol Spritz.
While witbiers are not traditionally aged for long periods in oak, we are very pleased with the interplay between the aromatic oak and witbier spices.
This beer is ready to drink now but will continue to develop cellar character over time – and can be enjoyed for many years to come when stored upright, in a cool, dark space.
