Let me walk among the fruit cellars of the farmer's barn and soak in that heady must. It is lively and bright, earthy and mellow, a perfume of cherries aged like grace.
Process & tasting notes: Cherries Aged Like Grace 2024 was blended from beer aged in barrels for one to three years and then rested on Montmorency cherries for an additional six months, before being blended with young saison prior to bottling.
On the nose, this vintage is full of sparkling rose wine aromatics, with hints of saison lime zest, touches of vanilla-oak, and baking spice from the beer’s long contact with cherry pits and oak.
On the palate, the acidity matches the Montmorency cherry, with some light, food-friendly tannins, and a sorbet-like fizz to the finish.
The beer is ready to drink now, after resting for six months in the bottle, and will continue to develop our signature Brettanomyces character with earthy and citrus-funk over the next year.
