Kneeling before firm fruit, slow ripened with time, and by loving hands through elegant senescence, to bitter-fragrant form, each apricot made gold.

Each Apricot Made Gold is an aged saison expressing ripe apricot flesh, with complex underlying notes of almond, marzipan, and Amaretto.


To make this saison, we sourced several varieties of apricots from a single farm in Beamsville, Ontario, and ripened them in our brewery for three days – a laborious but joyful task that required turning each apricot by hand once a day.

Each Apricot Made Gold was blended from four unique recipes, made during our 2021 and 2022 brewing seasons using barley, wheat, spelt, buckwheat and oats, with hops from Germany and New Zealand.
 
After one to two years in barrels, our saison rested upon whole apricots for three months before conditioning in keg and bottle.

We are enamoured with this beer’s expression of apricots, its delicate rustic notes and restrained acidity.
