Process & tasting notes: Feral Heart is a farmhouse lager brewed in collaboration with our friends at Fairweather Brewing. The open-fermented lager was brewed during the cooler season, and blended with saison aged in barrels for two years.
Feral Heart is an expression of the beer that we, as brewers, want to drink after a day in the brewhouse – the dry, crispness of a lager with the delicate touch of Brettanomyces that we love in mixed-fermentation saison.
Serving suggestions: We recommend aggressively pouring Feral Heart into a tumbler glass to form a proud head, waiting for the head to collapse before topping up with more beer in a three-stage pour.
