Process & tasting notes: Plums Lovely as a Poem (2021) is a saison aged in wine barrels and refermented on yellow plums from Mike Culp’s Greenlane Farm in the Twenty Mile Bench appellation of the Niagara region. The beer is a combination of mature spelt and buckwheat saisons made using hops from France and Germany, our mixed-fermentation cellar culture, and bright plums selected at peak ripeness.
The plums transfer their refreshing acidity onto the saison blend that has oaky vanilla, citrus zest and fresh-cut floral notes. We added an additional barrel of mature wheat saison lightly touched by grains of paradise to the blend to balance the acidity and bring forward our cellar character.
The finished beer takes us back to eating golden plums in the summer heat of Mike’s cool Vineland Station orchard. Today, we are pleased to share this beer with you to enjoy, in laughter and stillness.
Serving suggestions: We prefer to suspend the yeast back into the bottle for a more voluminous mouthfeel and enhanced cellar character. Enjoy in a white wine glass.
